Our family has been producing fine wines on the slopes of Mercurey at the heart of the Burgundy Côte Chalonnaise since 1770.
Located in the small hamlet of Touches at the foot of the Saint-Symphorien church, we wanted to develop our parcel on this unique terroir to which we are so deeply connected.

In search of pleasure

It was in 1997 that Manu Bautista succeeded his stepfather to the estate.
Whilst preserving the savoir-faire of the previous generations, this transfer from one generation to another brought modernity to our estate. Today, Manu is the proud cultivator of these 11 hectares of vines. The pleasure that he takes in their production can be clearly felt in the taste of our wines.

The search for the perfect fruit

We have the perfect conditions to produce grapes of the highest quality. Our entire vineyard is picked by hand and put into small cases to protect the grapes.
Careful attention is paid to the selection of the harvest date to ensure the grapes are at optimum ripeness. The grapes are first sorted on the vine, then on a sorting table in the vineyard itself. Constantly looking for fruitiness in our wines, we press only the very best grapes.

In search of generosity

Built in 2016 and covering an area of over 400m2, our winery is equipped with the latest technologies.
Dug into the rock itself, the constant temperature all year round allows us to optimise the ageing of our wines in oak barrels. We adapt our cultivation to the characteristics of each of our terroirs, providing structure and generosity to our fine wines.
